Prune and Olive Chicken

: : Ingredients


  • 4 chicken breasts
  • 1 can black olives
  • 2/3 cup of pitted prunes, roughly chopped
  • 3 cloves of garlic
  • 4 bay leaves
  • 1/3 cup olive oil
  • 1/3 cup sherry vinegar
  • 3 rounded tablespoons dried oregano
  • Fine sea salt, freshly ground pepper
  • 2 tablespoons brown sugar
  • 1/2 cup dry white wine
  • fresh cilantro
  • 1/3 cup sliced almonds, toasted

Instructions : :

  • Step 1
  • Step 2
  • Step 3
Cut up the chicken into small chunks and place in a roasting pan.
In a small bowl, mix the rest of the ingredients.
Pour mixture over chicken.
Mix everything up in the pan and put in the oven on 350 for 1 hr.
Stir up everything half way through cooking time.
Make sure to remove bay leaves before serving

Additional Notes...

Elaine says: Add a little spicy to it!
Kory says: Marinate over night for even deeper flavor!


I hate prunes and olives ...

"But my god!!!!! This dish is delicious! Honestly, the two flavors together seem to cancel each other out and create a while new flavor combination. I am all for any kind of dish that combines fruits, veggies, etc with meats so this was a really wonderful surprise. I never thought I'd like it AT ALL! But I love it. I would love to see it with a little spicy aspect."
